Steps
1. Rinse the quinoa under cold water and drain.
2. In a small saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed.
3. In a bowl, combine cherry tomatoes, cucumber, bell pepper, feta cheese, and olives.
4. In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper to create the dressing.
5. Once the quinoa is cooked, fluff it with a fork and let it cool slightly.
6. Combine the quinoa with the vegetable mixture and drizzle with the dressing. Toss gently to combine.
7. Serve in a bowl, garnished with fresh parsley.
