Steps
1. Rinse the quinoa under cold water until the water runs clear.
2. In a small saucepan, combine quinoa and water. Bring to a boil, then reduce heat and cover. Simmer for about 15 minutes until water is absorbed.
3. In a bowl, combine cherry tomatoes, cucumber, bell pepper, and chickpeas.
4. Once the quinoa is cooked, fluff it with a fork and let it cool slightly before adding it to the vegetable mixture.
5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the quinoa mixture and toss to combine.
6. Top with feta cheese and fresh parsley before serving.
