Steps
1. Rinse the quinoa under cold water and drain.
2. In a small pot, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Remove from heat and let it sit for 5 minutes.
3. Fluff the quinoa with a fork and let it cool slightly.
4. In a bowl, combine the chopped olives, cherry tomatoes, and cucumber.
5. In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper.
6. Add the cooled quinoa to the vegetable mixture, pour the dressing over, and toss to combine.
7. Garnish with fresh parsley before serving.
