Steps
1. Preheat your oven to 400°F (200°C).
2. In a small bowl, mix olive oil, thyme, rosemary, garlic powder, salt, and pepper.
3. Rub the herb mixture all over the chicken breast.
4. Place the chicken on a baking sheet and bake for 25-30 minutes or until fully cooked and golden brown.
5. Meanwhile, boil the cubed potato in salted water until tender, about 15 minutes.
6. Drain the potatoes and return them to the pot.
7. Add butter, minced garlic, and milk to the potatoes, then mash until smooth and creamy.
8. Serve the chicken alongside the garlic mashed potatoes.
