1. Heat olive oil in a skillet over medium heat. 2. Add diced potatoes and cook for 8-10 minutes until golden and slightly crispy. 3. Stir in minced garlic and cook for 1 minute until fragrant. 4. Add diced pork to the skillet, season with salt, pepper, and smoked paprika. 5. Cook pork until browned and cooked through, about 7-8 minutes. 6. Add sliced bell peppers and sauté for another 3-4 minutes until tender. 7. Sprinkle shredded cheddar cheese evenly over the skillet. 8.
