Steps
1. Season the pork chop with salt, pepper, and garlic powder on both sides.
2. In a small bowl, mix the maple syrup and Dijon mustard until well combined.
3. Heat olive oil in a skillet over medium heat. Once hot, add the pork chop and cook for 4-5 minutes on each side, or until it reaches an internal temperature of 145°F (63°C).
4. During the last minute of cooking, brush the maple glaze over the pork chop, allowing it to caramelize slightly.
5. Remove the pork chop from the skillet and let it rest for a couple of minutes.
6. In the same skillet, add the spinach or kale and sauté for 2-3 minutes until wilted.
7. Serve the glazed pork chop alongside the sautéed greens.
