Steps
1. Preheat your oven to 400°F (200°C).
2. In a bowl, mix the soy sauce and yogurt to create a marinade.
3. Add the chicken breast to the marinade, ensuring it's well coated. Let it sit for 15 minutes.
4. While the chicken marinates, place the diced potatoes and sliced onions on a baking sheet. Drizzle with olive oil, and season with salt and pepper. Toss well to coat.
5. Roast the potatoes and onions in the preheated oven for 20 minutes.
6. After 20 minutes, add the marinated chicken breast to the baking sheet and return to the oven.
7. Bake for an additional 20 minutes or until the chicken is cooked through and the potatoes are golden and tender.
8. Let the dish rest for a few minutes, then garnish with fresh parsley before serving.
