Steps
              1.In a large skillet on medium-high heat, heat oil and sauté garlic and onion until softened. 
2. Add potato, rice and tomato. Sauté for another 5 minutes and season with black pepper. 
3. Reduce heat to medium-low, cover and cook for 10 minutes, stirring occasionally, until potato is cooked through. 
4. Serve over rice and enjoy!
