Steps
1. Cook the pasta according to package instructions until al dente, then drain and set aside.
2. In a bowl, whisk the eggs with a pinch of salt and pepper.
3. Heat vegetable oil in a pan over medium heat. Add the mixed vegetables and stir-fry for 2-3 minutes until tender.
4. Push the vegetables to one side of the pan and pour in the eggs, scrambling them until fully cooked.
5. Add the cooked pasta to the pan, pour in the soy sauce and sesame oil, and toss everything together until well combined.
6. Stir in the chopped green onion and adjust seasoning if necessary.
