Steps
1. In a bowl, whisk the eggs with salt and pepper until well combined.
2. Heat the olive oil in a non-stick skillet over medium heat.
3. Add the chopped spinach and sauté for 1-2 minutes until wilted.
4. Pour the whisked eggs over the spinach, tilting the pan to spread them evenly.
5. Cook for about 2-3 minutes until the eggs start to set.
6. Sprinkle crumbled feta cheese over one half of the omelette and fold the other half over.
7. Cook for another minute until the cheese is slightly melted.
8. Slide the omelette onto a plate and serve warm, optionally garnished with red pepper flakes.
