Beef and Egg Fried Rice with Crispy Potato Cubes

A savory main dish combining tender beef, fluffy scrambled eggs, crispy potatoes, and fragrant soy sauce-infused rice. This one-pan meal balances textures and flavors for a satisfying dinner.

Steps

1. Parboil the diced potatoes in salted water for 5 minutes, then drain and pat dry. 2. Heat half the oil in a pan over medium heat, fry the potato cubes until golden and crispy, about 7-8 minutes. Remove and set aside. 3. In the same pan, add remaining oil and sauté the beef slices with garlic powder, salt, and pepper until browned and cooked through, about 4-5 minutes. 4. Push the beef to one side of the pan, crack the egg into the empty side, and scramble until just set. 5. Add the cooked rice and crispy potatoes back into the pan. 6. Pour soy sauce evenly over the mixture and stir-fry everything together for 2-3 minutes until heated through and well combined. 7. Garnish with chopped green onion if desired and serve hot.
