Steps
1. Sprinkle the unflavored gelatin powder over the cold water and let it bloom for 5 minutes.
2. Heat the boiling water and dissolve the bloomed gelatin in it, stirring well.
3. Add sugar or honey and lemon juice, stir until fully dissolved.
4. Pour a small layer of gelatin mixture into a mold or serving glass and chill for 10 minutes until slightly set.
5. Add the fresh mixed berries into the mold.
6. Pour the remaining gelatin mixture over the berries.
7. Refrigerate for at least 2 hours until fully set.
8. Serve chilled, optionally garnished with a sprig of mint.
