Steps
1. Heat the vegetable oil in a non-stick skillet over medium heat.
2. Crack the egg carefully into the skillet and fry until the whites are set and the yolk is cooked to your preference, about 3-5 minutes. Season with salt.
3. In another pan, warm the refried beans over low heat until heated through, stirring occasionally.
4. In the same skillet, briefly warm the corn tortillas for about 30 seconds on each side until pliable.
5. To assemble, place the warmed beans on a plate, top with the fried egg, and serve with the warm tortillas on the side.
6. Garnish with fresh cilantro and serve with salsa if desired.
