
Steps
- Heat a small amount of cooking oil in a skillet over medium heat.
- Crack the egg into the skillet and cook until the white is set and the yolk is still runny, about 2-3 minutes.
- While the egg is cooking, warm the refried beans in a separate pan over low heat, stirring occasionally.
- In another skillet, lightly toast the tortillas for about 30 seconds on each side until warm.
- To serve, place the warm tortillas on a plate, spread the refried beans on top, and carefully place the fried egg over the beans.
- Season with salt and pepper to taste.
