Steps

1. Heat the oil in a large skillet over medium heat. 2. Add the potatoes and cook until lightly browned. 3. Add the onion, tomatoes and rice and stir. 4. Cook until the onion is soft and the rice is lightly toasted. 5. Crack the egg into the skillet and stir to combine. 6. Season with salt and pepper and cook until the egg is done. 7. Serve hot!
