Fried Rice with Veggies and Tofu

This delicious fried rice dish packs in plenty of flavour and nutrition, making it the perfect main dish.

Steps

1. Heat the oil in a large frying pan over medium heat. 2. Add the tofu and cook for a few minutes until lightly golden. 3. Add the cooked rice and season with garlic powder, ginger and salt and pepper. Cook for a further 5 minutes, stirring occasionally. 4. Add the cooked sweetcorn, peas and red peppers. Cook for a further 5 minutes, stirring occasionally. 5. Add the honey and cook for a further 2 minutes. 6. Serve immediately.

Ingredients for 1 person: - ½ cup cooked rice - 2 tablespoons cooked sweetcorn - 2 tablespoons cooked peas - 2 tablespoons cooked diced red peppers - 2 teaspoons sunflower oil - ½ tablespoon honey - 2 tablespoons of diced tofu - ½ teaspoon of garlic powder - ¼ teaspoon of ground ginger - Salt and pepper to taste
