Steps
1. Season the chicken breast with salt and pepper.
2. Heat the olive oil in a skillet over medium heat.
3. Add the chicken breast and cook until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.
4. In the same skillet, add the minced garlic and sliced onion. Sauté until the onion becomes translucent.
5. Add the diced tomatoes and cook for another 5 minutes, until they begin to soften.
6. Return the chicken breast to the skillet and cook for an additional 10 minutes, or until the chicken is cooked through.
7. Serve the garlic and tomato chicken hot, garnished with fresh herbs if desired.
