Curried Chicken and Carrot Soup

A flavorful and comforting soup combining tender chicken, sweet carrots, aromatic curry, garlic, and onions.

Steps

1. Heat some oil in a large pot over medium heat. 2. Add the diced chicken breast and cook until browned and cooked through. Remove from the pot and set aside. 3. In the same pot, add the diced onions and minced garlic. Sauté until the onions are translucent. 4. Add the diced carrots and curry powder. Stir well to coat the carrots with the curry powder. 5. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for about 15 minutes or until the carrots are tender. 6. Using an immersion blender or regular blender, puree the soup until smooth. 7. Return the soup to the pot and add the cooked chicken. Season with salt and pepper to taste. 8. Simmer for another 5 minutes to allow the flavors to meld. 9. Serve hot and enjoy!
