Steps
1. Season the chicken breast with salt and pepper.
2. Heat olive oil in a skillet over medium heat.
3. Add the chicken breast and cook for 5-6 minutes on each side until golden and cooked through.
4. In the last 2 minutes, add butter and minced garlic to the pan; spoon the garlic butter over the chicken.
5. While the chicken cooks, warm the cooked rice and mix in chopped parsley and dried thyme.
6. Serve the garlic butter chicken on a bed of herb rice, spooning extra garlic butter from the pan over the top.
