Steps
1. In a medium pot, bring salted water to a boil and add the diced potato. Cook for about 10 minutes or until tender.
2. While the potatoes are cooking, heat butter in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
3. Add the minced garlic to the skillet and cook for an additional minute until fragrant.
4. Drain the potatoes and add them to the skillet. Toss to coat in the garlic butter mixture.
5. Season with salt and pepper to taste, and cook for 2-3 minutes to allow the flavors to meld.
6. Serve hot, garnished with fresh parsley if desired.
