Garlic Roasted Vegetable Sandwich

Steps

1. Preheat the oven to 400°F (200°C). 2. Toss the sliced carrots, cucumbers, and potatoes with minced garlic, salt, pepper, and a drizzle of olive oil. 3. Spread the vegetables on a baking sheet and roast for 20-25 minutes until tender and slightly crispy. 4. Toast the bread slices. 5. Arrange the roasted vegetables on one bread slice, top with the other slice, and press gently to combine. 6. Cut the sandwich in half and serve.
