- In a bowl, whisk the egg with brewed coffee, salt, and pepper.
- Pour the egg mixture over the sautéed vegetables in the skillet.
- Cook on low heat until the edges start to set, about 5-7 minutes.
- Optionally, finish under the broiler for 2-3 minutes until the top is golden and set.
- Slice and serve warm.
