Steps

1. Heat olive oil in a non-stick skillet over medium heat. 2. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant. 3. Stir in the grated carrot and cook for another 2-3 minutes until softened. 4. In a bowl, whisk the egg with brewed coffee, salt, and pepper. 5. Pour the egg mixture over the sautéed vegetables in the skillet. 6. Cook on low heat until the edges start to set, about 5-7 minutes. 7. Optionally, finish under the broiler for 2-3 minutes until the top is golden and set. 8. Slice and serve warm.
