Zucchini Noodles with Pesto and Cherry Tomatoes

A refreshing and healthy twist on traditional pasta, these zucchini noodles are tossed in a vibrant homemade basil pesto and complemented by sweet cherry tomatoes. Perfect for a light lunch or dinner!

Steps

1. Using a spiralizer or a vegetable peeler, create noodles from the zucchini and set aside. 2. In a food processor, combine basil leaves, pine nuts, garlic, olive oil, salt, and pepper. Blend until smooth to make the pesto. 3. In a skillet over medium heat, add the zucchini noodles and sauté for 2-3 minutes until slightly tender. 4. Remove from heat and mix in the pesto until well combined. 5. Add the halved cherry tomatoes and toss gently. 6. Serve immediately, topped with grated Parmesan cheese if desired.
