Steps
1. Using a spiralizer or a vegetable peeler, create noodles from the zucchini and set aside.
2. In a food processor, combine basil leaves, pine nuts, garlic, olive oil, salt, and pepper. Blend until smooth to make the pesto.
3. In a skillet over medium heat, add the zucchini noodles and sauté for 2-3 minutes until slightly tender.
4. Remove from heat and mix in the pesto until well combined.
5. Add the halved cherry tomatoes and toss gently.
6. Serve immediately, topped with grated Parmesan cheese if desired.
