Steps of Preparation: 1. Preheat your oven to 400 degrees F. 2. Arrange the potato slices and zucchini in a single layer in a baking dish. 3. Sprinkle the herbs and seasoning over the vegetables and drizzle with olive oil. 4. Bake in the oven for 15 minutes. 5. Remove the dish from the oven, add the haddock fillet and top with the onion and tomato. 6. Return to the oven and bake for 8-10 minutes until the fish is cooked through. 7. Serve with your favourite Greek sides!
