Steps
1. Preheat your grill or grill pan over medium heat.
2. Brush the peach halves with olive oil and place them cut-side down on the grill.
3. Grill for about 3-4 minutes until grill marks appear and the peach is slightly softened.
4. In a bowl, combine the cooked quinoa, balsamic vinegar, feta cheese, and fresh mint. Season with salt and pepper to taste.
5. Once the peaches are done, chop them into bite-sized pieces and add them to the quinoa mixture.
6. Toss gently to combine and serve warm or at room temperature.
