Steps
1. Preheat your grill to medium-high heat.
2. Lightly brush the watermelon slices with olive oil.
3. Grill the watermelon slices for about 2-3 minutes on each side until grill marks appear.
4. Remove the watermelon from the grill and let it cool slightly.
5. Cut the grilled watermelon into bite-sized cubes and place them in a bowl.
6. Add crumbled feta cheese, chopped mint, lime juice, salt, and pepper to the bowl.
7. Toss gently to combine all the ingredients.
8. Serve immediately, garnished with extra mint if desired.
