1. Preheat oven to 350F. 2. Brush eggplant slice lightly with olive oil and place on a baking sheet. 3. Mince garlic and spread evenly over the eggplant slice. 4. Sprinkle parmesan cheese over top. 5. Bake in preheated oven for 18 minutes, or until eggplant is tender and cheese is lightly golden. 6. Garnish with fresh basil and serve.
