Steps
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a bowl, mix the grated carrots, rolled oats, melted butter, and honey (or maple syrup) until well combined.
3. Add in the cinnamon, nutmeg, baking powder, and salt. Stir until the mixture forms a sticky dough.
4. If desired, fold in the chopped nuts and raisins for added texture and flavor.
5. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
6. Bake for 12-15 minutes, or until the edges are golden brown.
