Steps
In a bowl, combine chia seeds, almond milk, honey (if using), and vanilla extract.

Stir the mixture again to ensure the chia seeds are evenly distributed.
Cover the bowl and refrigerate for at least 2 hours or overnight to thicken.
When ready to serve, spoon the pudding into a bowl or glass and top with fresh mixed berries.
Garnish with mint leaves if desired.
