Steps

1. Preheat the oven to 400°F (200°C). 2. In a small bowl, mix together the rosemary, thyme, garlic, salt, and pepper to create the herb mixture. 3. Rub the beef tenderloin with olive oil, then coat it with the herb mixture, pressing it onto the surface. 4. Heat a skillet over medium-high heat and sear the beef for 2-3 minutes on each side until browned. 5. In a baking dish, toss the sliced zucchini, bell pepper, and carrot with balsamic vinegar, salt, and pepper. 6. Place the seared beef on top of the vegetables and roast in the oven for 15-20 minutes until the beef reaches your desired doneness. 7. Let the beef rest for 5 minutes before slicing and serving with the roasted vegetables.
