Steps
1. Preheat your oven to 375°F (190°C).
2. In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper.
3. Rub the herb mixture all over the rabbit leg, ensuring it's well-coated.
4. Place the rabbit leg in a baking dish and surround it with chopped seasonal vegetables.
5. Pour the chicken broth into the dish.
6. Cover with foil and roast in the preheated oven for 30 minutes.
7. Remove the foil and roast for an additional 15 minutes, or until the rabbit is golden brown and cooked through.
8. Let it rest for a few minutes before serving with the roasted vegetables.
