Steps
1. Preheat the oven to 400°F (200°C).
2. In a small bowl, mix the olive oil, rosemary, thyme, garlic, salt, and pepper.
3. Rub the herb mixture all over the lamb chops.
4. Heat an oven-safe skillet over medium-high heat. Sear the lamb chops for about 2-3 minutes on each side until browned.
5. Transfer the skillet to the preheated oven and roast for 8-10 minutes for medium-rare, or until desired doneness.
6. Remove from the oven, let rest for a few minutes, and serve with a squeeze of lemon.
