Steps

1. Preheat your oven to 400°F (200°C). 2. In a small bowl, mix olive oil, rosemary, thyme, minced garlic, salt, and pepper. 3. Rub the herb mixture over both sides of the lamb chops. 4. Heat a skillet over medium-high heat and sear the lamb chops for 2-3 minutes on each side until browned. 5. Transfer the chops to the oven and roast for 10-12 minutes for medium-rare. 6. Meanwhile, boil the cubed potatoes in salted water until tender, about 15 minutes. 7. Drain the potatoes and return them to the pot. Add butter, milk, garlic powder, and salt. Mash until smooth. 8. Serve the lamb chops with a generous scoop of garlic mash on the side.
