Steps
1. Peel and cube the potato, then boil in salted water until tender, about 15 minutes.
2. Drain the potato and mash with butter, milk, crushed garlic, and salt until smooth. Set aside and keep warm.
3. In a small bowl, mix rosemary, thyme, minced garlic, salt, and pepper.
4. Rub the lamb chop with olive oil, then press the herb mixture onto both sides.
5. Heat a skillet over medium-high heat and sear the lamb chop for 3-4 minutes on each side, or until desired doneness.
6. Let the lamb rest for 3 minutes before serving.
7. Plate the lamb chop with a generous serving of garlic mashed potatoes.
