Steps

1. Preheat your oven to 400°F (200°C). 2. In a small bowl, mix together olive oil, rosemary, thyme, minced garlic, salt, and pepper. 3. Rub the herb mixture over both sides of the lamb chops. 4. Heat a skillet over medium-high heat and sear the lamb chops for 3-4 minutes on each side until browned. 5. Transfer the lamb chops to a baking dish and roast in the oven for 10-12 minutes for medium-rare. 6. Meanwhile, boil the diced potato in salted water until tender, about 15 minutes. 7. Drain the potatoes and return them to the pot. Add butter, milk, minced garlic, and salt, then mash until smooth. 8. Serve the lamb chops hot with a side of garlic mashed potatoes.
