Steps

Preheat your oven to 190°C (375°F). In a bowl, mix olive oil, thyme, rosemary, minced garlic, salt, and pepper. Coat the rabbit leg with the herb mixture thoroughly. Place the rabbit leg on a baking tray and roast in the oven for 25-30 minutes until cooked through and golden brown. Meanwhile, boil the cubed potato in salted water until tender, about 15 minutes. Drain the potatoes and return them to the pot. Add butter, milk, minced garlic, and salt; mash until smooth and creamy. Serve the herb-crusted rabbit alongside the garlic mashed potatoes.
