6. Place the rack of lamb in a roasting pan, bone side down.
7. Roast in the preheated oven for about 25-30 minutes for medium-rare, or until the internal temperature reaches 145°F (63°C).
8. Let the lamb rest for 5 minutes before slicing into individual chops and serving.
