1. In a small bowl, combine minced garlic, rosemary, thyme, olive oil, salt, and pepper. 2. Rub the herb mixture all over the lamb chops and let them marinate for at least 30 minutes at room temperature. 3. Preheat the grill to medium-high heat. 4. Grill the lamb chops for about 4 minutes per side for medium-rare, adjusting time for desired doneness. 5. Remove from grill and let rest for 5 minutes. 6. Serve with a squeeze of lemon juice if desired.
