1. Preheat the oven to 375°F (190°C). 2. In a small bowl, mix Dijon mustard, honey, minced garlic, salt, and pepper. 3. Season the chicken thigh with salt and pepper. 4. Heat olive oil in a skillet over medium-high heat. 5. Sear the chicken thigh for 2-3 minutes on each side until golden brown. 6. Remove skillet from heat, brush the honey mustard mixture over the chicken. 7. Transfer the skillet to the oven (or move chicken to an oven-safe dish) and bake for 15-20 minutes until cooked through. 8. Garnish with fresh thyme before serving.
