Steps
1. Preheat the oven to 375°F.
2. Season the chicken with salt and pepper to taste. Place the chicken on baking sheet and bake for 15 minutes until cooked through.
3. Heat a large nonstick skillet over medium heat.
4. Add the tomato and sauté until softened, about 3 minutes.
5. Add the cooked chicken to the pan and stir-fry for 2 minutes.
6. Add the cooked rice and mix well to combine.
7. In a small bowl, whisk together the egg and yogurt until combined.
8. Pour the egg-yogurt mixture into the skillet and stir-fry until egg is cooked, about 2 minutes.
9. Drizzle with extra-virgin olive oil and season with salt and pepper to taste.
10. Serve.
