Indian Egg Bhurji

A classic Indian dish made with scrambled eggs cooked in a spicy tomato and onion masala, enriched with butter and mayonnaise.

Steps

1. Heat butter in a pan over medium heat. 2. Add chopped onions and sauté until golden brown. 3. Add chopped tomatoes and cook until they turn soft and mushy. 4. In a bowl, beat the eggs with mayonnaise and season with salt, turmeric powder, red chili powder, and garam masala. 5. Pour the egg mixture into the pan and scramble it with the tomato and onion masala. 6. Cook until the eggs are fully cooked and well combined with the masala. 7. Garnish with fresh coriander leaves and serve hot with roti or rice.
