Steps
1. Heat oil in a large skillet over medium heat and add the chopped onion. Fry until golden brown.
2. Add the minced garlic and grated ginger and cook for an additional minute.
3. Add the carrots and toss until they’re mixed with the other ingredients.
4. Crack the eggs into the pan and season with garam masala, turmeric, salt, and pepper.
5. Stir everything together and cook for 8-10 minutes until the curry has thickened and the eggs are cooked through.
6. Serve hot with your favorite rice or flatbread!
