Steps
1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
2. Add onions and sauté until golden brown.
3. Add carrots and cook for 2-3 minutes until slightly tender.
4. Add tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for another 2-3 minutes.
5. Add cooked rice and kidney beans. Stir gently to combine all the ingredients.
6. Cook for an additional 5 minutes, stirring occasionally, until the flavors meld together.
7. Garnish with fresh coriander leaves and serve hot.
