This flavorful potato curry is made with a base of onion, garlic, and ginger and has tomatoes and potatoes for a filling option.

Steps

1. Heat oil in a large skillet over medium heat. 2. Add onions and cook until softened, about 5 minutes. 3. Add garlic, ginger, cumin, turmeric, and coriander. Cook for another minute. 4. Add tomatoes and potatoes, stirring to combine. 5. Add water and bring to a simmer. 6. Reduce heat to low and cover with a lid. Simmer until potatoes are tender, about 15 minutes. 7. Serve with naan or rice.
