Rice with Veggie and Avocado Salsa

Steps

  1. Heat a large skillet over medium heat and add the olive oil.
  2. Add the red onion and bell pepper and cook until softened, about 3 minutes.
  3. Stir in the seasonings and cook for 1 minute more.
  4. Add the cooked rice to the veggies and stir to combine.
  5. Cook until heated through, about 2 minutes.
  6. Serve rice topped with avocado, cilantro, and salsa.
