
Steps
- Heat oil in a large skillet over medium-high heat.
- Add onion and garlic and cook until softened, about 5 minutes.
- Add potatoes and tomatoes and cook for another 5 minutes.
- Stir in the spices and season with salt and pepper.
- Reduce heat to medium-low and cover. Simmer for 15-20 minutes, stirring occasionally, until potatoes are cooked through.
- Serve hot with rice or flatbread.
