Indian Potato Curry

Steps

1. Heat oil in a large skillet over medium-high heat. 2. Add onion and garlic and cook until softened, about 5 minutes. 3. Add potatoes and tomatoes and cook for another 5 minutes. 4. Stir in the spices and season with salt and pepper. 5. Reduce heat to medium-low and cover. Simmer for 15-20 minutes, stirring occasionally, until potatoes are cooked through. 6. Serve hot with rice or flatbread.
