
Steps
- Crush the digestive biscuit and mix it with melted butter. Press this mixture into the bottom of a small ramekin to form the crust.
- In a bowl, combine the cream cheese, powdered sugar, crushed pistachios, lemon juice, and vanilla extract until smooth.
- Pour the cheesecake mixture over the biscuit crust and smooth the top.
- Refrigerate for at least 2 hours or until set.
- Before serving, garnish with whole pistachios on top.
