Steps
1. Crush the digestive biscuit and mix it with melted butter. Press this mixture into the bottom of a small ramekin to form the crust.
2. In a bowl, combine the cream cheese, powdered sugar, crushed pistachios, lemon juice, and vanilla extract until smooth.
3. Pour the cheesecake mixture over the biscuit crust and smooth the top.
4. Refrigerate for at least 2 hours or until set.
5. Before serving, garnish with whole pistachios on top.
