Lemon Herb Garlic Rice

Steps

1. Rinse the basmati rice under cold water until water runs clear. 2. In a small pot, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute. 3. Add the rice and stir to coat with the garlic oil for 1-2 minutes. 4. Pour in water, add a pinch of salt, and bring to a boil. 5. Reduce heat to low, cover, and simmer for 15 minutes, or until rice is tender and water is absorbed. 6. Remove from heat and fluff rice with a fork. 7. Stir in lemon juice, lemon zest, chopped parsley, and season with black pepper to taste. 8. Serve warm as a refreshing and aromatic side dish.
