Steps

1. Cook the low-carb pasta according to package instructions, then drain and set aside. 2. In a small saucepan, heat olive oil over medium heat and sauté minced garlic until fragrant (about 1 minute). 3. Add almond milk and bring to a gentle simmer. 4. Stir in shredded cheddar cheese and cottage cheese, stirring continuously until melted and smooth. 5. Season the cheese sauce with salt and pepper to taste. 6. Toss the cooked pasta in the cheese sauce until well coated. 7. Serve topped with grated Parmesan cheese and garnish with fresh parsley if desired.
