
Steps
- Slice the zucchini lengthwise into 1/4-inch thick strips to form the 'sandwich' base.
- Heat a non-stick skillet over medium heat and lightly grill the zucchini slices for about 2-3 minutes on each side until slightly softened.
- Spread cream cheese evenly over one side of each zucchini slice.
- Layer smoked salmon on top of the cream cheese.
- Sprinkle capers and fresh dill over the salmon. Season with salt and pepper to taste.
- Top with another zucchini slice, cream cheese side down, to form a sandwich.
- Serve with a slice of lemon on the side for a fresh hint of flavor.
